  • 2 1/2 cups blanched almond flour, 1/2 tsp baking soda, 1/4 tsp salt
  • 3 large eggs, 1/3 cup plain Greek yogurt, 1/4 cup maple syrup, 1/4 cup melted butter
  • Zest of 1 lemon, 2 tbsp lemon juice, 1 tsp vanilla, 1 cup blueberries
  • Whisk the wet, stir in the dry, fold in the berries. Fill a lined 12-cup muffin tin.
  • Bake at 350°F for 20 to 24 minutes, until golden and a toothpick comes out clean.

Chocolate Peanut Butter Mug Cake

  • Serves 1 · about 8 g added sugar (almost none with allulose)
  • 3 tbsp almond flour, 1 tbsp unsweetened cocoa, 1/4 tsp baking powder, pinch of salt
  • 1 large egg, 1 tbsp peanut butter, 1 tbsp milk, 2 tsp maple syrup or allulose
  • Stir everything in a big mug with a fork until smooth.
  • Microwave 1 minute to 1 minute 30 seconds, until the top is just set. Rest 1 minute.
